Specification: Bottega Rose Gold is a pure rosè Pinot Noir sparkling wine. The grapes are hand picked and vinified at a controlled temperature. The skins stay in contact with the must for 24 hours. Must and skins are then separated with a soft pressing. Fermentation occurs at a controlled temperature of 18 ° C. During the year which follows the harvest, the obtained wine goes through the sparkling process. Second fermentation in steel containers occurs according to the Italian Charmat method at a controlled temperature of 14° C and lasts 60-90 days.
Specification: In 1974, 100 years after the creation of Cristal, Jean-Claude Rouzaud decided to create the Cristal Rosé cuvée. To achieve this, he selected old-vine Pinot noir grapes from the finest Grand Cru vineyards at Aÿ, which are now cultivated according to biodynamic principles. A blend of around 55% Pinot noir and 45% Chardonnay, comprising 20% of wine matured in oak tuns, Cristal Rosé is produced using the saignée (bleeding) process after cold maceration. The Cristal Rosé cuvée is aged, on average, for 6 years in Louis Roederer’s cellars.
Specification: Hennessy Fine de Cognac is part of the tradition of “fine à l’eau”: Fine de Cognac mixed with water. For over a century, until it declined in the 1960s, this popular custom treated water as the essential flavor enhancer for “fines.” Today, Hennessy Fine de Cognac deserves its name more than ever as it revisits the traditional fine à l’eau by transforming it into a creative, modern drink, emblematic of our times and its new rituals.
